SNAP Food Challenge Blog – Teri Knight – Day 2

Frankly, I’m glad I don’t have a family of five to be concerned about like Mayor Pownell! It’s just me, as Jeff bailed. He said he lived it through the 80s and 90s and has no desire to revisit it. I get that! I remember nights of macaroni and cheese made with water because I didn’t have milk or butter. Yuck.

This morning, I brought a baggie of cereal with a banana to work. The inexpensive cereal is quite good, but I added cinnamon and sliced in a banana.

Lunch was a bowl of my hearty kale and white bean stew. Gotta say that stuff is really tasty. Glad I had dijon mustard on hand and rosemary.

It’s 4 p.m., and I’d really like an iced coffee. Dang, not in my budget. I’d also like a piece of chocolate!

For supper, I had a tuna sandwich.  No chips, no beer….  And no snack later.
